Recipe: Charred Zucchini With Herbs, Garlic and Ricotta

Looking for a hearty and healthy dish to warm you up this winter? This zucchini recipe* is sure to leave you satisfied. Although the plate is substantial enough for a meal, it also makes a perfect side for chicken or fish.

Charred Zucchini Recipe Ingredients:

2 medium green or yellow zucchini

Salt

1 teaspoon olive oil

2 stems fresh thyme

Pinch dried oregano

1 tablespoon fresh chopped basil and/or Italian parsley

2 cloves garlic, minced

½ cup fresh ricotta cheese or goat cheese

1 teaspoon dry bread crumbs

1 teaspoon melted butter

 

Preparation:

1. Cut the zucchini in half, lengthwise. Sprinkle the halves with salt, and let them sit for about 20 minutes.

2. Dry the zucchini with paper towels, and coat with olive oil.

3. Grill or broil the zucchini halves on high heat for about 3 minutes (be sure not to overcook the zucchini, or the entire dish will be soggy). Toss immediately with herbs and garlic.

4. Let the zucchini cool slightly, and then cut the halves into smaller chunks.

5. In an oven-safe dish, toss the zucchini with ricotta. Top the dish with breadcrumbs and butter, and broil it briefly until the cheese is melted.

Nuts
